Potato
Latkes
Wash, peel and grate 9
medium potatoes.
Place in colander and let
stand for 10 min.
Press out remaining liquid.
Mix with 2 medium minced
onions.
Add 3 slightly beaten eggs
Add 3-4 T matzo meal
1 t salt
1/8 t
pepper
½ t baking powder
Mix well.
Heat about ¼”
olive oil in a large skillet and add soup spoonfuls of latke
mixture.
Fry until golden brown on both
sides
Serve with applesauce, sour
cream, jam, powdered sugar, cinnamon or cucumber and sour cream
