Marinated Tomatoes-Maxine Brewer

 

 

Slice 3 large tomatoes into ½” slices. Arrange slices in a large shallow dish. Set aside.

 

Combine the following in a jar that has a lid:

½ c olive oil                ¼ c red wine vinegar

1 t salt                         ¼ c pepper

1 T chopped parsley            ½ crushed garlic clove

2 T chopped onion   1 t chopped fresh basil or 1 t dried basil

 

Place lid on jar and shake mixture vigorously.

Pour over tomatoes.

Place in refrigerator for no more than 3-4 hours before serving or the tomatoes get mushy.
