Sausage Tortolini Soup-Laura Ormsby
Take casing off 1 lb Italian sausage and cook
with 2 large chopped onions and 1 glove crushed garlic.
Add:
3 (14.5 oz) cans of beef broth
1 (14.5 oz) can diced tomatoes
1 (8 oz) can tomato sauce
1 c red wine
2 thinly sliced carrots
1 T sugar
2 T Italian seasonings
Bring to a boil and simmer for 30 min. Add 2 small
diced zucchini and 1 (9 oz) pkg of cheese torotlini.
Cook until zucchini is tender. Sprinkle with parmesan
cheese to serve.
