Gazpacho
Blend in blender:
3 large tomatoes
1 small cucumber
1 small red pepper
1
small green pepper
1 small onion
1 garlic clove
Add to blender:
2 c V8 juice
½ c chicken broth
3 T red wine vinegar
salt and fresh ground pepper
1 T fresh chives
Blend until smooth.
Chill at least 30 min
