Fried
Chicken Livers-Sherrie Lightner
Soak 1 carton chicken
livers in salt water for at least 3 hours.
Rinse well but carefully since
they are very fragile.
Dip in plain flour.
Place in hot skillet of ¼ c
oil and 1 stick butter.
Salt and pepper
liberally.
Let brown on one side. Turn
over livers.
Salt and pepper other side
liberally.
Turn down heat to low.
Cook slowly for 1 hour.
Turn heat back up and turn
livers over to get more of the oil out of them
Drain on paper towels.
