Butterscotch
Pie
Heat in microwave for 7 to 8 minutes until hot: 1 c brown sugar
2 c milk ½ stick of butter Pour ¾ c of hot mixture into 3 beaten egg yolks Return egg mixture to remaining mixture and microwave 2 minutes Add 3 T cornstarch mixed in ½ cool water to mixture, stir and return to microwave for 2-3 minutes until thick. Add 1 t vanilla Pour in baked pie shell Top with meringue using 3 reserved egg whites. Bake 10 to 15 min at 350o until meringue start browning.
