Watermelon Rind Pickles

 

Soak 1 melon rind cut in 1” cubes in 1 gal water and 1 c slaked lime overnight in refrigerator.

 

Drain and rinse three times.

 

Cover with cold water and boil 30 min.

 

Drain.

 

Cover with 1 qt vinegar, 8 c sugar and 1 t pickle spice.

Boil 1 hour until cucumbers are clear.

 

Add water to keep cucumbers covered entire time.

 

Jar and seal.
