Transparent Pickles-Wilma Tarter

 

 

Let 1 gal cucumbers stand in 1 pt salt and 6 pt water for 6 days. Stir daily.

Drain and rinse.

Cover with cold water.

Add alum the size of an egg and bring to a boil for 10 min.

Drain and cover with cold water.

Add 1 T ginger.

Boil 10 min.

Drain.

Put in kettle with:

1 qt vinegar

4 lb sugar

2 t celery seed

1 t whole spice

½ stick cinnamon bark.

 

Boil until transparent.

Add green food coloring if desired for fancy pickles.

 

Place in jars and seal.
