Combine in mixer:
2 ½ lb ground beef
2 ½ lb ground pork
¼ c Worcestershire
1/3 c tomato paste
2 ½ oz chopped garlic
dash Tabasco
2 T kosher salt
1 t black pepper
5 eggs
1 T fresh parsley
2 heaping T fresh chopped
basil
Add:
4 ½ oz bread crumbs
8 oz grated pecorine romano
Make 4 oz balls
Place on cookie sheet
Bake 12 min at 325o
