Stuffed Shrimp-Mary Marshall
Beat 2 eggs, ¼ c
mayonnaise, and 1 t Old bay seasoning.
Mix with 1 lb crabmeat
(claws) and ¼ lb breadcrumbs.
Cut a pocket in fresh
shrimp (size 15 to 20).
Take out the vein.
Stuff with crab mixture.
Dip in flour and then
in egg wash (1 c water and 1 beaten egg mixed together).
Roll in cracker meal.
Deep fry 3-4 min at 350o until
golden brown.
Sauce:
Mix horseradish, ketchup
and hot sauce to taste.
