Rice Pudding-Sherrie Lightner
In microwave measuring bowl,
cook on high for 7 minutes:
3 c half and half
1 stick butter
½ c sugar
1 c brown sugar
1 t cinnamon
½ t nutmeg
When hot and bubbly, add 3
t cornstarch in ½ c cool water and stir.
Cook 3 min on high in
microwave and stir. Keep cooking until thickened.
Cook 3 c instant rice.
Add 4 beaten eggs and
stir
Combine 2 mixtures and stir.
Add 1 c white raisins
and 1 T Grand Marnier
Bake 25 min at 350o.
Serve with whipped cream.
