Diabetic Custard
Heat 2 c skim milk and 1
T low fat butter in microwave bowl:
When hot pour part of mixture
into 3 eggs and beat well.
Return egg mixture to milk
mixture and microwave 2 min. on high.
Add 2 T. cornstarch
dissolved in ¼ c cool water
Microwave 3 min on high or
until thickened.
Add:
8 pkgs. Saccharin or 8
t liquid sweetener
½ t nutmeg
½ t vanilla
Bake in baking dish until
edges are brown.
Garnish with no fat whip cream and nutmeg.
