Peanut Butter Roll-Libby Lightner

 

Cook together to softball stage:

2 ½ c sugar

½ c light Karo

½ c water

 

While syrup cooks, beat 2 egg whites until very stiff peaks form.

Continue beating egg whites until completely finished.

At softball stage, pour ½ syrup over eggs while continuing to beat them

Return remaining syrup to stove and cook just to hardball stage.

Pour rest of syrup over egg whites.       

Beat until fondant looses it’s gloss.

 

Divide in 3rds. Roll out the thirds on xxx sugar dusted cloth for 3 rolls of candy.

Spread soft peanut butter over each fondant to 1” from edge.

Roll up each fondant jellyroll fashion.

When peanut butter is firm, cut in pieces and store.
