Microwave
Peanut Brittle
Combine 1 c sugar and ½ c white Karo
in 2 qt glass measuring cup.
Microwave on high for 4 min.
Stir in with wooden spoon 13/4
c unsalted dry-roasted peanuts. Cook on high for 4 min.
Stir in 3 t butter and 1
t vanilla and cook on high for 2½ min.
Add 1 t soda. Stir until
mixture is light and foamy.
Pour onto large greased baking
sheet.
Spread candy with the back of
a wooden spoon.
As candy cools, stretch to a
thin sheet, using palms of hands.
Cool completely before
breaking into pieces.
Store in airtight container in
cool place.
