Blend and mix well: 3 c grated zucchini, 2 c white sugar, 1 c brown
sugar 4 eggs, and 1 1/2 c oil. Mix the following
in a separate bowl: 3 c plain flour,
1 1/2 t baking powder, 1 t soda, 1 1/2
t cinnamon, 1 5 salt, 1 t vanilla and 1 c chopped nuts. Add slowly to
zucchini mixture. Bake in greased and floured bunt or angel food cake pan
for 1 hour and 20 min at 325o. While still warm sprinkle with XXX
sugar if desired.
