Vanilla Cheese Cake-Sherrie Lightner
Crust:
1 pkg
crushed graham crackers, 1/3 c sugar and ¼ c melted butter.
Press on
bottom of large spring form pan.
Beat until
frothy:5 (8 oz) pkg soft cream cheese
Add:1 ½
c sugar and blend well
Add:3
eggs one at a time
Add:2 ½
t vanilla
Pour over
graham cracker crust.
Bake 40 min
at 350o
Turn off
oven. Do not open door. Leave cake in over for another 30 minutes.
Cool
completely. Store in refrigerator overnight.
Blueberry Sauce for Cheese Cake
Bring to a
boil in heavy pan or in microwave heat to boil:
1 c sugar
1 qt blueberries
1 c water
3 T butter
Add 3 T
cornstarch to ½ c cool water and mix until no lumps are left.
Add to hot
mixture. Cook until thick and clear. Stirring constantly if on stove top.
Serve with
topping and fresh whipped cream
