Red Velvet Cake-Sherrie Lightner
Mix
½ c soft butter
2 eggs
2 (1oz) bottles red food
coloring
2 ¼ c plain White Lily flour
1 T vanilla
1 t salt
1 ½ c sugar
2 T cocoa
1 c buttermilk
Pour 1 t soda on top of
well-blended batter. Pour
1 T vinegar over soda.
Fold into batter.
Bake 25-30 min at 350o
Cool completely
Icing:
Cook 1 c milk and 3
T plain White Lily flour until thick. Stir constantly.
Set aside and cool completely.
To assemble cake:
Beat 1 c sugar, 1 t vanilla
and 1 c soft butter until creamy. Add flour mixture and beat until
smooth. Ice between layers and then ice cake.
