Pineapple Upside Down Cake-Susie Dykeman
Melt ½ c butter in
bottom of large baking dish.
Spread 1 c brown sugar
evenly in pan
Arrange slices of 1 (#2)
can pineapple slices in pan.
Mix:
3 beaten yolks
1 c sugar
5 T pineapple juice
1 c plain White Lily flour
1 t baking powder
1/8 t
salt
Fold in 3 stiff egg whites
Pour over pineapple in pan.
Bake 30-35 min at 375o
