Oatmeal
Cake
Pour 1 ½ c boiling water over 1 ½ c
oatmeal and let it stand 20 min.
Cream ½ c butter and 1 c firmly packed
brown sugar and 1 c white sugar.
Add 2 well-beaten eggs and the oatmeal
mixture.
Blend well.
Sift in 1 1/3 c plain White
Lily flour, 1 t cinnamon, 1 t soda, and ½ t salt.
Mix and bake 30-35 min at 350o in large
flat pan
Topping
Mix:
6 T butter
½ t vanilla
¼ c cream
1 c coconut
1 c chopped pecans
½
c brown sugar
Spread over cake while still warm. Place under
broiler 4-6 min. Warm in microwave
for a few seconds before serving.
