Chocolate Pecan Cake
Bake Libby Lightner’s
chocolate cake baked in 2 square pans.
Filling
Heat in microwave:
1/3 c
sugar
2 T
butter
3 egg yolks
2/3 c milk
¼ t salt
When hot, add 2 T
cornstarch dissolved in 1/3 cool water.
Stir and return to microwave.
Thicken by cooking 2 minutes at a time until thick. Stir
thoroughly every two minutes.
Add ½ t vanilla and 1
c chopped pecans
Sea Foam Icing
Boil in heavy pan to softball
stage (Approximately 7 min):
¾ c brown sugar
¾ c white sugar
½ c hot water
Pour over 3 stiff egg whites
reserved from filling above and beaten with ¼ t cream of tartar.
Beat until stiff peaks form
and it loses gloss.
