Bread-Grace Epperson
Sponge stage:
4 ½ c warm water
7-8 c plain White Lily
flour
2 pkg yeast in 1/2 c warm
water
2 T sugar
Let stand until sponge
bubbles.
Add:
2 T salt
5 T warm molasses
1 c brown sugar
5 T melted butter
1½ c rye flour
1½ c wheat flour
1 t caraway seed
1 t poppy seed
1 t sesame seed
2 whole seeded oranges
(grate rinds, remove membrane and cut up)
Knead for 10 min. Let rise
once.
Punch down. Place in loaf
pans.
Let rise again.
Bake 40 min at 375o
